About Yusuke Nomura
Born in 1981 in Tokyo, Nomura trained as a bartender and sommelier before becoming the fourth-generation owner and executive chef of his family's restaurant. His cultural curiosity has shaped a modern shojin-ryori style featuring nuanced flavors, artful presentation, and innovative collaborations. He also serves as a Tokyo Tourism Ambassador.
