About Thierry Schwartz
Thierry Schwartz is a former Joël Robuchon protégé who left the Parisian three-star world to return to Alsace and open a deeply committed terroir restaurant in Obernai in 2002. He holds the title of Officer of France's Order of Agricultural Merit and has built 'Table Naturelle' around a 95%-within-50km sourcing philosophy: biodynamic farms, permaculture producers, local hunters and fishers. He holds both a Michelin star and a Michelin Green Star — his sommelier Cyril Kocher received the Michelin Sommelier Award in 2023. His 'Egg in the Egg' signature preparation and use of pure spelt, Arctic char, and wild sorrel epitomise his approach.
