Born from a moment of "pure defiance" against unreliable suppliers, Chef Birch established Alimentum's own organic farm, Lille Østergaard, located just 25 kilometers north of Aalborg. Here, a full-time farmer cultivates approximately 80 different types of vegetables, fruits, berries, and herbs, supplying 85% of the kitchen's annual vegetable needs.
