About Shimizu Shojiro

NIKON means 'two suns' — a reference to Nara's ancient status as the seat of Japan's imperial court (710–784 CE), when it was the center of Japanese civilization. Shimizu's cooking is an act of historical recovery, using forgotten Yamato ingredients and preparation methods alongside modern kaiseki structure.

Shimizu Shojiro, born 1983 in Nara Prefecture, founded NARA NIKON at the remarkably young age of 32, quickly earning two Michelin stars for a cuisine that celebrates Nara's ancient food culture. His approach is rooted in Yamato-ryori, the culinary tradition of Japan's original capital.
