About Sam Aisbett
Australian chef Sam Aisbett has a 20-year career across four countries. Raised in Melbourne, he honed his skills at Quay in Sydney and Tetsuya Wakuda's restaurant before earning a Michelin star at Whitegrass in Singapore within its first year. After a self-imposed five-year break from F&B, he settled in Vietnam and opened Akuna at Le Méridien Saigon, earning a Michelin star in 2024 and retaining it in 2025.
