About Rafael Osterling
Rafael Osterling was born in Lima and trained in Europe — particularly in Mediterranean cuisine (Italy, Spain) — before returning to Peru to open his flagship restaurant Rafael in Miraflores. His cooking draws on Mediterranean culinary traditions (pasta, seafood preparations, olive oil-based cooking) applied to Peruvian ingredients: Humboldt Current seafood, Andean tubers, native Peruvian herbs. He also opened El Mercado (his casual cevicheria) and has become one of Lima's most important chefs for demonstrating how European cooking technique and Peruvian produce interact. Osterling is at #19 Latin America's 50 Best 2024.
