About Paul Stradner
Paul Stradner is Austrian-born — trained in Vienna, worked at elite establishments across Europe before becoming Head Chef at Villa René Lalique in 2017, taking full creative control in 2020. His 'Triple A' philosophy — Alsace, Austria, Artisanship — infuses every dish: Alsatian terroir ingredients (wild herbs, Vosges game, Rhine fish) executed with Viennese precision and Lalique's artisan aesthetic. The restaurant earned its 2 Michelin stars in 2016 under predecessor Jean-Georges Klein; Stradner has maintained and evolved the star-level cuisine while developing his distinctive personality. His sommelier Romain Iltis is MOF (Meilleur Ouvrier de France) 2015. The villa is within the Northern Vosges Regional Nature Park, adjacent to the Lalique crystal factory — where Lalique artisans still blow and engrave crystal pieces that appear throughout the restaurant.
