Drawing inspiration from the nostalgic flavors of his childhood—from his family's street food cart in rural Egypt to cherished home-cooked meals—Seif embarks on a journey to shed the constraints of tradition without forsaking its essence. Working in close collaboration with restaurateur Giovanni Bolandrini, who sought to transform his perception of heavy commercial Egyptian food, Seif developed tasting menus that satisfy both locals and international guests. His approach involves a rigorous selection of quality ingredients, such as specific olive oils and sea salts, to ensure distinct and memorable flavors. Among his most legendary signature dishes is the **Koshari**, Egypt's national dish, which he transforms from a warm staple into a vibrant cold salad. This reinterpretation features delicate quail's eggs as a garnish, along with crispy chickpeas and fried onions, adding layers of texture that elevate the dish and bring out the aromatic spices. Another notable creation is the **Mu'ammar rice with smoked beef** (also referred to as baked Mu’ammar rice paired with charcoal-braised smoked beef), where he consciously reduces the rice portion and makes the tender meat more prominent to counter the traditional dish's heaviness.
