Jérémy Page trained for over 15 years under Joël Robuchon — one of the most rigorous apprenticeships in French gastronomy. At 1741 he deploys that classical precision in a bold blind-menu format: guests choose only the number of courses (5, 7, 9, or 11) and are surprised by every dish. The menu changes with season and inspiration, never repeated. Sommelier and director Michael Wagner pairs wines or non-alcoholic alternatives to match each course's reveal. The restaurant is named for the construction year of the adjacent Palais Rohan, with its dining room facing the Strasbourg Cathedral.
