About Hideki Ishikawa

Born in Niigata Prefecture in 1965, Hideki Ishikawa opened his namesake restaurant in 2003. His guiding principle is 'mui-shizen': serve cuisine that is true to nature, free from artifice. He earned the prestigious Tokyo Mentor Chef Award in 2022. His restaurant group includes three Michelin-starred establishments: Ishikawa (3 stars), Kohaku (3 stars), and Ren (2 stars), accumulating eight Michelin stars across the group.
