Heikki Kivimäki is head chef and co-owner of Restaurant Demo in Helsinki, which received its Michelin star in 2007 and held it for 17 consecutive years — the longest continuous star run of any Finnish restaurant. Demo opened in 2003 and became a cornerstone of Helsinki's modern fine-dining scene.
