Demo ('to demonstrate') has demonstrated for two decades that Helsinki can sustain world-class fine dining. Kivimäki's 17-year star tenure reflects consistent quality rooted in Finnish seasonality — Arctic char, chanterelles, lingonberry, sea buckthorn — expressed with restraint and clarity.

Heikki Kivimäki is head chef and co-owner of Restaurant Demo in Helsinki, which received its Michelin star in 2007 and held it for 17 consecutive years — the longest continuous star run of any Finnish restaurant. Demo opened in 2003 and became a cornerstone of Helsinki's modern fine-dining scene.
