Trained on cruise ships, then at Café des Artistes in Puerto Vallarta. Staged at El Celler de Can Roca, Akelarre, Mugaritz, and Noma. Opened Alcalde in 2013, named after Mercado Alcalde. Known for applying European fine-dining technique to an entirely local Jalisco ingredient base, with masa as a central element.
