About Bernard Leray
Bernard Leray was born in Rennes, Brittany and trained under Bernard Loiseau at La Côte d'Or — one of France's most storied apprenticeships. He earned his first Michelin star at just 24 years old. He and his wife Martine have run La Nouvelle Auberge for three decades (celebrating 30 years in 2025). The restaurant occupies a historic coaching inn on the route between Colmar and Munster valley. Leray's cuisine blends the Breton maritime influences of his training (unusual in inland Alsace) with Alsatian mountain terroir and Loiseau's refined 'water-based sauce' technique. Martine curates the wine list with a strong Alsatian focus.
